imyourskribe: I’ve been looking at the grilled cheese subreddit, and now I want grilled cheese. What kind of cheese would you use?

pricero1: Spread toast with onion and garlic relish, add ripe Camembert, then grill.
TheGrimReeple: Right now, cheddar's the best I've got handy. When my fridge is better stocked, I'd prefer gruyere.
MABBY: I have taken to using a combination of cheeses, hard and soft, shredded then blended together into a cheese paste with some white wine and diced shallot, then "spread" onto the bread. It's REALLY good, and oozy when cooked.
D00MSTALKER: One that would melt, hopefully yellow in color.
Jedadeana: Ok, I need to hear more. Not only is there a Reddit for just grilled cheese, but you actually searched it out too?
