Pseudo Nymh: Typically I put an initial rating after one play, and mark the rating as initial. Three plays is usually necessary for me to form a lasting opinion, although a lot of my ratings fluctuate.

sos1: I originally said "3" but have just noticed two games I rated after two playings and - horrors! - one after one playing. So I guess it's really 1, but I usually try for 3.
