tickmanfan: Eggs are for meatloaf. I have found that there are no emulsifiers needed for hamburgers. The higher the fat the better the taste.
otrex: Yes, always use an egg for hamburger. If BBQ'ing, use regular beef; if frying, use lean.

atrium: I purchase the "premium" grade (my store has one even lower in fat, but it's not worth the difference in price). I use egg and other ingredients when cooking hamburgers.

CortexBomb: I think it can be made a number of ways and still be completely tasty. I prefer lower fat meat for burgers (i.e.: ground chuck)...some is essential so it doesn't dry out, but too much leads to woeful shrinkage

skelebone: Egg can be used as a binding agent in 90/10 or less fat beef, but I find is unneccessary in anything with a higher fat content. I prefer 80/20, as 90/10 is a bit dry, and 70/30 is a bit fatty. I can always add a little fat to 80/20 if it's not to my liking.

CDRodeffer: I think the egg and seasonings are optional, and I usually don't include them. As for fat content, I don't purchase ground beef because we grow our own cattle. It's way better than anything you can get in a store.
heli: skip the egg and skip the beef for that matter. I make mine from ground turkey.
